Stéphanie Colinot runs a most interesting little Domaine. For 16 years she was the winemaker at her family domaine in Irancy, but in 2017 she set up her own operation, including a new winery in Villy. AOP Irancy “Les Cailles” is made from pinot noir only, planted about fifteen years ago, on Kimmeridgian clay-limestone soil, with a south-east exposure and is harvested by hand. The grapes are completely destemmed and fermented in a temperature-controlled stainless-steel vat. 

This beautiful, organic red Burgundy opens with lovely aromas of dense, rich, and lush fruits with notes of confier and evergreen on the palate leading to a long, persistent finish. An excellent natural burgundy.
